Pizza Berlusconi with lingonberries

This is the award winning recipe of Jarmo Valtari. He runs Kotipizza restaurants in Finland with his wife Reija. The story of the pizza is funny and it is based on Silvio Berlusconis comments of poor quality of the finnish food. Jarmo won Americas plate with this recipe in 2008. This is my version of the recipe. It includes many backbones of the finnish cousins. 


Ingredients:

- 50 grams or 2 ounces of cold smoked reindeer
- 2 cups of chanterelle mushrooms
- mozzarella cheese
- red onion 
- lingonberries
- crushed tomatoes

For the pizza dough you need:
- 50 grams of  00 flours
- 50 grams of organic wheat flours
- 0,875 of cold water
- one eight teaspoon of yeast
- half teaspoons of salt
- olive oil
 
 Lets start with the dough. This dough recipe is from Luca Platanian. Owner of the popular pizza chain Pizzarium.

1. Mix flours and yeast together
2. Add cold water, salt and bit of olive oil and mix
3. Lift the dough to the work surface and shhake and boogie it for a 10 minutes.
4. After the dough seems right return it to bowl and put on wet towel.
5. Let the dough rest for a 2 hours
6. Lift the dough from the bowl and make it into ball shape
7. Put cold wet towel on the dough ball and let it rest for 5-6 hours
8. Now the dough is ready
 

Then begins the funny time!

1. Shape and strech the dough.

2. Add tomatoes, mozzarella cheese, mushrooms, reindeer meat, onions and lingonberries
 
3. Bake it in the hot oven! 
 
 
This is the most finnish pizza you have ever eaten!
